Vankaya Fry (Brinjal/Eggplant Fry) Recipe

Vankaya Fry, also known as Brinjal or Eggplant Fry, is a delicious and popular South Indian dish. Here's a simple recipe to make Vankaya Fry:



**Ingredients:**


- 2 medium-sized brinjals (eggplants)

- 2 tablespoons oil

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon cumin seeds

- A pinch of asafoetida (hing)

- 1 sprig of curry leaves

- 1/4 teaspoon turmeric powder

- 1/2 teaspoon red chili powder (adjust to taste)

- 1 teaspoon coriander powder

- 1/2 teaspoon garam masala (optional)

- Salt to taste

- Chopped coriander leaves for garnishing


**Instructions:**


1. **Preparing the Brinjals:**

   - Wash the brinjals and cut them into small cubes. You can keep the skin on or remove it, based on your preference.


2. **Tempering:**

   - Heat 2 tablespoons of oil in a pan. Add mustard seeds and let them splutter. Then, add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.


3. **Adding Spices:**

   - Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a minute until the spices release their aroma.


4. **Cooking the Brinjals:**

   - Add the cubed brinjals to the pan. Mix them well with the spices so that they are coated evenly. Cover the pan with a lid and cook on medium heat.


5. **Frying the Brinjals:**

   - Stir the brinjals occasionally to ensure even cooking. Cook until the brinjals become soft and cooked through. They should turn slightly brown and caramelized.


6. **Finishing Touch:**

   - If using garam masala, you can add it at this point for added flavor. Mix well.


7. **Garnish:**

   - Turn off the heat and garnish with chopped coriander leaves for freshness.


**Serve:**

Serve Vankaya Fry as a side dish with steamed rice or roti. It also goes well as a topping for curd rice.


**Note:** You can adjust the level of spiciness by controlling the amount of red chili powder. Feel free to experiment with different spices and herbs to suit your taste.
